My Favorite Fish or Game by Gary McBride Of all the Fish or Game I harvest each year, my favorite is a big platter of Frog Legs. They are best when fresh, not frozen, but frozen is also very good. We lightly coat the clean clear meat with flour, add some salt and pepper and fry in some butter until done. This takes only a few minutes, turning so as not to burn until golden brown. For health reasons we have started to use olive oil as a subsitute for the butter recently and they are excellent. They are so good that you find yourself working to get every tiny piece of that tender white meat from the bone. Try it with a frosty glass of your favorite beer or a nice glass of wine, you'll love it. |
