Marinated Deer Roast
Marinate deer roast at least 2 hours before cooking. Overnight is even better. ( I use Buckhead Wildlife Marinade ) After marinating, dispose of marinade.
Brown the roast in 2 Tblsp. butter, in a dutch oven
After browning add all of these ingredients:
2 Tblsp. Tone's Imitation Bacon Bits 1¾ cups Dry Red Wine
½ Tblsp. Red Wine Vinegar ¼ cup diced onion
¼ cup carrots (julianne) 2 Medium Potatoes
Bring liquid to a boil, cover and reduce to a simmer. Let simmer until roast is fork tender. About 2hrs. for a 2 lb. roast.
Add 1 cup of water to 2 Tblsp. flour, mix until smooth. Remove roast from dutch oven, add flour mix to the juices and stir. Salt and pepper to taste.
You can slice the roast and return it to the gravy mix.
