Duck Casserole

This recipe comes from a place that Don and I like to stop on our day trips. Sodies is in the Flippin Depot, in Flippin Arkansas. The rail system runs right next to the Depot. Upon entering, to your right is a full service pharmacy. But, if you turn left, you step back in time to the "Old Fashion" soda bar and grill. Grab a table by the window, and imagine travel some fifty years ago. A bustling hub for travelers to rest and revitalize. The "Laid Back atmosphere is good for the soul. The food is excellent, and the ambiance is reminiscent of "Days Gone By"
Duck Casserole 2 ducks, cooked ½ cup Rotel Tomatoes 1 Lrg. onion, diced 1 can tomato sauce 1 green bell pepper,diced 1 pkg. Dorito Chips 1 can cream of mushroom soup Grated Cheese 1 cup chicken broth Garlic salt to taste 1 can cream of chicken soup Chili Powder to taste Cook and bone duck. Cover bottom of 9x13" pan with duck. Sprinkle with garlic salt and chili powder. Put onions and green peppers over duck. Crumble Doritos on top of onion and peppers. Mix soups, broth and Rotel tomatoes and spread over chips. Cover with grated cheese and tomato sauce. Bake covered at 350° for 30 minutes. Uncover and bake another 30 minutes. |
