CHOCOLATE ESPRESSO PUDDING CAKE

Ingredients:
1 cup sifted cake flour 
1 1/2 tsp. baking powder tsp. baking soda cup sugar 
1 tbsp. unsweetened cocoa 
1 tbsp. instant espresso powder 
cup evaporated skim milk cup vegetable oil 
1 tsp. vanilla 
cup firmly packed dark brown sugar 
3 tbsp. unsweetened cocoa 
2 tsp. instant espresso powder 
1 cup boiling water 

Directions:
1.) Combine first six ingredients. Stir well. Combine milk, oil, vanilla and add to dry ingredients, stir. Spoon into an 8 inch square pan. 
2.) Combine brown sugar, cocoa, espresso powder and sprinkle over batter. Pour water over batter, DO NOT STIR 

Bake at 350 for 30 minutes or until cake springs back when touched. Serve warm. Be careful not to O. D. on this!
