Make Ahead Pancake Mix
1 quart unbleached, unsifted white flour
½ cup sugar
1 heaping tsp. baking powder
1 tsp. salt.
Combine all ingredients, stir well and keep in a tightly closed jar in the "Fridge"
When you're ready to make the pancakes, add ¼cup undiluted evaporated milk and ¼cup lukewarm water, to one cup of mix. Let the batter sit about 10 minutes. Then mix vigorously for a minute or two. Pour enough of the batter to form cakes 3 or 4 inches in diameter. Each cupful of dry mix will produce @3 to 4 griddle cakes about 4 inches in diameter.
The griddle cake mix travels well. They are especially tasty on an griddle, on an open fire, early in the morning, along with a good cup of coffee.
For a lunch treat, this recipe can be prepared and add precooked shredded meat, crumbled bacon or pork sausage and shredded cheese. After cooking, roll them up in wax paper and take along for lunch or that long hike when you don't want to be loaded down with a lot of gear.
